The quality of this second growth estate has improved markedly since the mid 1980s. The location is just to the north of the village of
Sauternes on gravelly hillside beds with a southwest orientation. Yields are low (about 15hl/ha) and the blend is
Sémillon (55%), Sauvignon (40%) and Muscadelle (5%). This high proportion of Sauvignon and the refusal to use any
new oak (the wine is aged in stainless steel and 5+yr old oak barrels for 24-36 months) gives Filhot a fruitier, more
aromatic quality than some of the bigger-boned Sauternes. That said, the bottle age here gives real depth of flavour and considerable complexity.

Brick red/tawny in colour, with delicate nutty aromas and a hint of dried fruits.
On the palate, very well balanced with a youthful fruity, luscious character, which integrates well with a long finish.
Perfect with nuts, dried fruits and blue cheeses. Lovely served slightly chilled.

The Ruby Dee is dark red in colour with a fresh vibrant aroma of dark fruits which follows through on the palate along with an almost mineral character, a youthful wine with good extract and great balance, offering superb "drinkability".
Ready to drink now after a meal on its own or with a selection of cheeses.
‘El Candado’ Pedro Ximenez Sherry, Valdespino

Valdespino is one of the oldest bodegas in Jerez, with a history of Sherry production going back six centuries. Back in 1264, Alfonso Valdespino was one of 24 knights who fought against the Arabs for the city of Jerez with King Alfonso X. As a reward for his efforts he was given land that formed the basis of the bodega. Today Valdespino belongs to the Estevez family, who purchased the bodega in 1999.
This delicious Pedro Ximenez has a liquid Christmas cake character, great depth and a lovely flick of acidity on the finish which serves to emphasise the unctuous sweetness and flavours of dried fig and raisins.
Great poured over vanilla ice cream, with mince pies, hard or blue cheese, or just on it's own after a meal

This is a great example of the Tawny Port style; the wine is aged for an average of 8 years in barrel, during which time, it loses it’s dark red colour and takes on a gorgeous tawny hue. The flavour is amazingly complex, with rich layers of dried fruits and a lovely nuttiness that stops it feeling too sweet. Delicious chilled as an aperitif as well as being a great wine for cheese (washed rind St Cera or creamy Isle of White Blue!)
